The weekend is here (yay!), and with it all sorts of temptation
A lot of you will be wondering how the hell you can stay motivated enough to dodge a calorie-laden brunch and stick to your overnight oats laced with chia seeds and nut butter.
Well good news.
You don’t have to.
See, at my house we’ll be having french toast with eggs, bacon and maple syrup.
Yes it’s important to eat your veggies.
Yes it’s best to avoid eating too many refined grains or sugars.
But it’s also important to not deprive yourself all the time.
It’s important to establish a balance.
If you’ve eaten well all week then you can skip the side of spinach every now and then without beating yourself up. Trust me on this, you don’t need to eat impeccably every single meal.
No one does.
And anyone that claims they do…is lying!
Now don’t get me wrong, if you’re planning a night out with burger, chips and booze later on then this probably isn’t the best option.
But if you’re planning on behaving yourself (from a nutritional perspective at least) for the remainder of the day, this is not going to matter one jot.
So this weekend change it up and sort yourself out with a delicious brunch packed full of healthy fats and plenty of protein to keep you feeling full well into the day.

GT French Toast with bacon
5 eggs, beaten with some freshly grated nutmeg (yum!)
2 slices of bread
4 rashers of unsmoked streaky bacon
2 eggs, fried
Coconut oil or ghee for the pan
And if you fancy it, a dollop of maple syrup!
Pour the beaten eggs into an oven dish or flat bottomed bowl
Place the bread in the eggs – the key here is to leave them in for 5-10 minutes so they sponge up all the egg and get nice and fluffy
While you’re waiting, get 2 frying pans and melt a tbsp oil/ghee in each one on a medium heat
Fix yourself a nice big coffee or cup of tea
Take the egg-soaked bread and place in one frying pan
Crack the remaining 2 eggs and bacon into the other frying pan
Leave for 3-4 minutes, then flip the bread and bacon
Leave for another 3-4 minutes, then remove
Top the toast with the bacon and eggs, and serve!
